| Abstract: | Наведено результати дослідження кінетики сушіння рибного фаршу із атерини чорноморської за різних температур. Установлено раціональний режим сушіння січеної рибної маси в сушильному апараті конвективним способом. Досліджено функціонально-технологічні властивості рибного концентрату. Results presented studies of the kinetics of minced fish drying from the Black Sea atherina at different temperatures. A rational mode of chopped drying has been established. fish mass in a dryer in a convective way. Investigated functional and technological properties of fish concentrate. |
