Проєкт кафе формату «slow food» із впровадженням інноваційних технологій харчової продукції з овочів

Abstract

На підставі комплексного аналізу ринку послуг закладів ресторанного господарства у м. Чернівці обґрунтовано перспективність реалізації проєкту кафе формату «slow food». Обрано вдале місце розташування кафе формату «slow food», з точки зору ринкової конкуренції, інфраструктурних можливостей міста, уподобань цільової аудиторії. Розроблено неймінг, легенду та логотип підприємства. Для кафе формату «slow food» «From Their Own» розроблено та обґрунтовано інноваційну технологію запіканки морквяної із бринзи. Наведено дані які свідчать про можливість розроблення овочевих страв із високою харчовою цінністю, що відповідають сучасним тенденціям здорового харчування На підставі розрахункового меню розроблено структуру виробничого процесу та процесу обслуговування споживачів. Охарактеризовано дизайнерське рішення кафе формату «slow food» «From Their Own». Розділ «Управління. Економіка» містить обґрунтування організаційно-правової форми господарювання з розробленням організаційної структури кафе формату «slow food» «From Their Own» у м. Чернівці Період окупності проєкту становить 3,2 роки. Based on a comprehensive analysis of the market for restaurant services in Chernivtsi, the prospects for implementing a “slow food” cafe project were substantiated. A successful location for the “slow food” cafe was selected from the point of view of market competition, the city’s infrastructure capabilities, and the preferences of the target audience. The naming, legend, and logo of the enterprise were developed. An innovative technology for carrot and cheese casserole was developed and substantiated for the “slow food” cafe “From Their Own.” Data were provided that indicate the possibility of developing vegetable dishes with high nutritional value that meet modern trends in healthy eating. Based on the estimated menu, the structure of the production process and the process of serving consumers were developed. The design solution of the “slow food” cafe “From Their Own” was characterized. Section “Management. Economics" contains a justification of the organizational and legal form of business with the development of the organizational structure of the "slow food" cafe "From Their Own" in Chernivtsi. The payback period of the project is 3.2 years.
